A wine made from a small production of grapes individually selected from each vine in order to use only the best of the best. This wine is only produced in years when each of the varieties that go into the blend, can give of their very best.

Fermentation: Alcoholic fermentation in stainless steel tanks at controlled temperatures.
Malolactic fermentation in oak.
Ageing: 12 months in new French oak, followed by ageing in bottle
Tasting notes: Clean, bright, very intense, highly coloured wine.. A complex bouquet of balsamic aromas, a hint of eucalyptus and menthol, wild berries (blackcurrants), black olives, combined with a light touch of toasted oak. Rich and long on the palate with a nice relationship between the acidity and alcohol, well-balanced and showing very ripe, smooth tannins.
Food Pairing: pairs well with game, red meat in sauce and aged cheeses.
Serving temperature: between 18- 20 ºC
